I woke up this past Saturday morning and got myself ready for my weekly coffee date with the most wonderful, Aaron Schrader. We’ve gone to Backporch Coffee every Saturday morning since their opening week nearly 4 years ago. It’s the absolute best coffee on the face of the earth, roasted by a very good friend of ours. Partaking in this is one of the best parts of my week. Sometimes we sit and talk and talk and talk until most of our morning is gone. Sometimes we meet friends. Sometimes we read. And sometimes we people watch. It’s lovely. This particular Saturday morning I caught myself staring out the window several times. It was gray, cloudy, gloomy, and threatening to rain the entire time. I love that kind of weather, possibly because we don’t get it very often, and it gives me an excuse to slow down and stay inside for the day.
So I decided to bake…
…and the outcome ended up being one of the most delightful morsels I’ve made…
Chocolate Sandwich Cookies with Dulce de Leche. Oh. My. Yum.
I am in love with how these pictures turned out! A thick layer of creamy, rich dulce de leche, sandwiched between two shortbread cookies laced with orange zest, dipped in bittersweet chocolate.
Thankful for rainy days.

These are the best thing ever!!! Mike and I just ate ours today. Can you believe we waited two whole days? Especially after the sneak preview on Sunday. They are now my favorite! I would like to put an order in now for Christmas. So good! Thanks for sharing with us:)
